Dark Hollow blends the miracle of two crafts–brewing and distillation–to create a work greater than the sum of its parts. An Imperial Stout has been aged in charred American oak bourbon barrels still dripping with uncut whiskey. For 100 days the young beer patiently breathes in and out of the wood, gaining complexity, character, and serious attitude. Can be enjoyed immediately, or five years later, when you dust off the last vintage bottle from your cellar to share with good company.

 

Chief Bottle Washer

 
This beer pours a very dark deep brown color with a light amount of head. It has a somewhat light roasted malt flavor with a mild residual sweetness. Although it has a pretty high ABV, it really doesn't have a strong alcohol taste. Quite a nice Stout beer. (1/27/12) Re-tasted 3/29/13 - The dark tan head seemed slightly stronger. It now seems to have a much stronger roasted malt flavor and the light bourbon taste comes through. The residual sweetness only seemed barely noticeable. Re-tasted 11/1/13 - no change in rating and still consider this a very good Imperial Stout.

A very good stout that is just what I would expect from a bourbon oak aged product from Blue Mountain. It was very flavorful and smooth. You can really taste the alcohol in this one. (Tasted 11/1/13).

This was a great beer. The Dark Hollow is a great dark brew. Smokey sweet with a true bourbon flavor. Tasted as advertised. a great brew. Still Great. This was a nice brew with the Halloween tasting. Tasted 1/27/2012 Tasted 3/29/2013 Tasted 11/1/2013

nice deep flavor, hint of Jack Daniela (bourbon) flavor -pretty tasty! (pre-2013) nice deep flavor, mild sweet dark smokey taste, light bourbon flavor (3/29/13) deep choclolaty, malty flavor, good smoky head. I really like this beer (11/1/13)
